When I was little, my parents would always take me to a noodle shop in Kowloon City for dumpling noodles or wonton noodles. The steamy atmosphere and the strong aroma of dried flounder soup are my only and most vivid memories of noodle shops. Authentic Fung Shing dumplings require more than half a day to make the soup base alone: "Ten catties of soup bones, eight catties of shrimp shells, two catties of dried flounder, half a catty of Jinhua ham, and two monk fruits, simmered over low heat for fifteen hours to produce ten buckets of clear and sweet soup base." The filling usually includes pork and shrimp, and bamboo shoots and wood ear mushrooms are often added, sometimes even a little bit of chives for texture. Then, dried flounder powder and sesame seeds are used to enhance the flavor! The dried flounder and sesame seeds are first roasted and ground into powder to bring out their umami flavor to the maximum extent!
The huge Fengcheng dumplings are really delicious! The shrimp meat is springy, and they're also filled with wood ear mushrooms and chives. They're so big that you need at least three bites to finish each one.
