The Legend of Malai Go
A long time ago, Malaysia, drawing inspiration from British sponge cake, improved its recipe to create a cake flavored with coconut milk or pandan leaves. Later, a Cantonese dim sum chef on a trip to Malaysia is said to have learned this method and created Malai Go, a golden-hued cake with a rich egg flavor.
In the past, Malaysia was often referred to as "Malai." Hence, the cake that came from "Malai" was commonly called "Malai Go" (Malai cake), and its origin has nothing to do with horses.
It is said that the "edges" of a traditional Malai Go, steamed in a single large piece, tasted the best, as there was a concern that the "center of the cake" might become coarse due to excessive heat. However, with modern ovens providing even heat distribution, the texture of the edges and the center is now quite similar.
Today's Malai Go has even been selected by CNN as one of the best cakes in the world!
