When I was little, my parents would always take me to a noodle shop in Kowloon City for dumplings or wontons. The broth alone for authentic Fengcheng dumplings takes over half a day to simmer: "10 pounds of soup bones, 8 pounds of shrimp shells, 2 pounds of sashimi, 50 pounds of Jinhua ham, and 2 monk fruits. It takes 15 hours of slow cooking to create 10 barrels of clear, sweet broth." The fillings are usually pork and shrimp, with bamboo shoots and wood ear mushrooms, and even a little chives for added texture. Then, sashimi powder and sesame seeds are used to enhance the flavor! The sashimi and sesame seeds are first roasted and ground into a powder to maximize the flavor and aroma!
The large Fengcheng dumplings are really delicious, with chewy shrimp and mushrooms, and are super large with black fungus, chives, etc. Each one should be eaten at least three times before eating.
