Commonly known as soup dumplings Baozi was a famous product of "Wanglou", one of the 72 main stores in Tokyo (today's Kaifeng), the capital of the Northern Song Dynasty. It was called "Cave Plum Blossom Baozi" and was known as "the best in Beijing". During the Northern Song Dynasty, it was spread south to Lin'an (now Hangzhou), also known as "grout steamed buns" and became a famous market snack at that time.It wasn't until the 1930s that a famous chef on the first floor changed the steaming process from large steaming to small steaming, and served it even in a steamer.
